Spring is here and a weekend trip to see family in Santa Cruz was just the excuse I needed to celebrate this vernal equinox (albeit a couple days late) with cupcakes!
I wanted to craft a cupcake that was unique and fresh and yet subtle like the early signs of spring. Thus I baked lavender cupcakes topped with a delightfully tart and sweet grapefruit buttercream! Lavender is delicate and aromatic and when paired with grapefruit, your mouth gets a burst of fresh citrus and then eases into an ethereal lavender flavor.
I also attempted marshmallow fondant for the first time and made decorations to top each cupcake.
